How a Bicycle Ride in Tulum Led to a Culinary Journey Down Memory Lane

A couple of weeks ago, while pedaling through the sun-dappled streets of Tulum, I stumbled upon a sight that made me hit the brakes—a full half of a pig, roasting over an open wooden fire. It was outside Siete Fuegos, a rustic eatery where the crackling flames seemed to beckon. I made a mental note to return, and today was the day. Spoiler alert: It was worth the wait.


A Journey of Memories
I get asked all the time: “If you can’t taste or smell, how do you crave food?” My answer is always the same—memories.

As a kid, I attended a luau in Hawaii with my family, and the pork served there left an indelible mark on my brain. Tender, juicy, and infused with a smoky richness, that underground-roasted pork became my gold standard. So when I saw that fire-roasted half pig at Siete Fuegos, I knew I had to experience it.


The Review
From the first bite of the grilled pork taco, those childhood memories came flooding back. The pork was everything I remembered: tender and juicy with perfectly crisped edges that only an open flame can create. Its savoriness was palpable, even without the ability to taste or smell. The guacamole added a buttery creaminess, and the pico de gallo offered just the right amount of freshness and juice without overshadowing the star of the plate—the pork.

I also sampled the tacos with their chipotle and Verde sauces, which were excellent, but honestly? The pork stood on its own. My final taco was enjoyed exactly as served, and it was perfection.

Siete Fuegos is a must-visit spot, especially for anyone heading to or from the beach in Tulum. Watching the pig roast over an open flame at the entrance sets the stage for what’s to come—a rustic, authentic meal that transports you to a simpler time.
