It was outside Siete Fuegos, a rustic eatery where the crackling flames seemed to beckon. I made a mental note to return, and today was the day. Spoiler alert: It was worth the wait.

As a kid, I attended a luau in Hawaii with my family, and the pork served there left an indelible mark on my brain. The guacamole added a buttery creaminess, and the pico de gallo offered just the right amount of freshness and juice without overshadowing the star of the plate—the pork.

I also sampled the tacos with their chipotle and Verde sauces, which were excellent, but honestly? The pork stood on its own. My final taco was enjoyed exactly as served, and it was perfection.
